Black Beans & Dirty Rice Soup - 2c

1/2 cup lean ham; cubed
1 cup lowfat chicken broth
1 lg onion; chopped
3 stalks celery; chopped
2 lg carrots; chopped
8 cup vegetable broth
1/4 tsp cumin; more to taste
1/4 tsp coriander; more to taste
1/2 tsp hot pepper sauce; more to taste
1/2 cup vegetable juice cocktail
1/4 cup lime juice; or lemon juice
1/3 cup wild rice
2/3 cup long-grain brown rice

Saute the veggies in the cup chicken broth until soft in a pressure cooker.

Toss all remaining ingredients in the pot stir lock lid in place bring up
to high pressure level out and cook for 12 minutes. Release pressure an let
sit closed for 5 minutes..
