Cajun Dirty Rice (Chicken Breasts) - 2c

1 teaspoon cayenne pepper
1 teaspoon ground black pepper
1 1/4 teaspoons sweet paprika
1/2 teaspoon dry mustard
1/2 teaspoon ground cumin
1/2 teaspoon ground thyme
2 each bay leaves
1 medium onion; chopped
1 clove galric; chopped
1 pound chicken breast halves; boneless skinless
1 cup brown rice; uncooked
2 1/2 cups low-salt chicken broth

Mix spices together except for bay leaves. Set aside. In a Dutch oven
sprayed with non-stick spray, saute onion and garlic until soft. Add the
spices and saute for 30 seconds. Add chicken cubes and saute 1 minute,
stirring constantly. Add rice, chicken broth and bay leaves. Bring to a
boil, reduce heat to simmer. Cover and cook 45 minutes or put in a 350 F.
oven for 45 minutes. Before serving, remove bay leaves.

Makes 4 servings.
