Jambalaya Casserole - 2c


1/2 medium onion; chopped
1/2 medium bell pepper; chopped
1 clove garlic; minced
1 rib celery; chopped
2 tablespoons vegetable oil
2 cups meat - choose 2 or more - ham, chic; cooked shrimp, sausage
3 cups cooked rice
1 can whole tomatoes, crushed coarsely; (14 1/2-ounce)
1/4 teaspoon thyme
1/4 teaspoon cayenne
  Salt; to taste
  pepper; to taste
1/2 cup minced parsley

Preheat oven to 350 degrees. Saute onion, bell pepper, garlic and celery
in oil until slightly wilted. Mix with meats, rice, crushed tomatoes and
their liquid, thyme, cayenne, salt and pepper. Place in lightly oiled
2-quart casserole. Cover and bake for 30 minutes. Sprinkle top with minced
