1/4 cup black tea leaves; (like Darjeeling)
5 cups water
2 teaspoons fresh ginger root; grated
1 whole star anise; broken up
1 teaspoon orange peel; grated
4 pieces cinnamon sticks; 1 1/2 inch
1 teaspoon cardamom seeds
10 whole cloves
5 whole peppercorns
1 teaspoon vanilla
1/4 cup honey
3 cups skim milk

Place tea leaves, water, ginger, anise, orange peel, cinnamon, cardamom,
cloves and peppercorns in a pan.

Bring to boil, reduce heat to low, stir, cover and boil 20 minutes. Strain
and add vanilla, honey, milk.

Heat thoroughly (do not boil) if serving hot. Pour over crushed ice if
serving cold.
