Chai Tea - 2c

      ---- MASALA SPICE MIX ----
1 stick cinnamon; 1 1/2 inch
3 pods cardamom; up to 4
2 whole black pepper corns; up to 3
2 whole cloves; up to 3
1/2 teaspoon ground ginger
      ---- TO ASSEMBLE ----
1 cup water
1 teaspoon sugar
1 teaspoon darjeeling tea leaves
1/4 teaspoon masala spice mix
1/4 cup milk

1. Grind cinnamon stick, cardamom, black pepper corns, and cloves to a
powder. Stir in ground ginger.

2. Combine water, sugar, tea and 1/4 teaspoon spice mix in a pan and bring
to a boil. Simmer for one minute.

3. Add milk, bring to a boil and simmer for 3-5 minutes.

4. Strain into a mug or teapot.

Yield: 1 servings
