BEAT THE HEAT TURKEY - (Heart Healthy) - 2c


1 pound turkey breast
2 c frozen whole kernel corn; thawed
1 jar (16 oz) mild salsa

Place the turkey breast in a large pot, pour boiling water over to cover.
Put over medium-low heat and cook until meat falls easily from the bone.

Remove meat and place in a large bowl. Shred turkey into 2-inch long pieces
Add uncooked salsa and corn. Mix well.

Serve as filling for pita bread, flour tortillas or whole grain bread.
