CHICKEN KORMA - (Heart Healthy) (HIGHLY SPICED) - 2c

2 c plain yogurt; non-fat
4 whole chicken breasts; skinless
4 t curry powder
2 t canola oil
2 t ground coriander
1 medium onion; peeled & cubed
2 t ginger; minced
2 large tomatoes; peeled & chopped
4 cloves garlic; peeled & minced
4 each bay leaves
1/2 t salt
1 teaspoon lemon juice
1 teaspoon red pepper; ground

Mix together yogurt, spices, garlic, and lemon juice in a medium bowl. Add
chicken, turning to coat.

Let stand at room temperature for 30 minutes.

Heat oil in a skillet over medium heat. Add onion and cook, stirring about
3 minutes or until lightly browned. Stir in tomato and bay leaves; cook 5
minutes. Add chicken and marinade mixture to pan and mix thoroughly. Cover
and simmer over medium-low heat, stirring frequently, for about 20-30
minutes, or until chicken is done.
